Healthy Pancakes

I am always surprised by the number of people who only use pre-made pancake mix. I am all for keeping things simple and cutting steps but with pancake mix, you still have to do most of the steps as it’s really only the dry ingredients that get premixed. I find the longest part with making pancakes is cooking them!

These pancakes have been one of our go-to healthy packed foods to take on the go. Pancakes on the go you ask? If my kids are home, they eat these with syrup but we can take these on the road and are pretty tasty on their own.

We freeze them in batches (if we have any leftovers!) and heat them up in the microwave or toaster.

To make, mix all the dry ingredients together and then add in the milk and eggs. Mash up the banana in a separate bowl and add the apple sauce. Mix the fruit into the rest of the ingredients and stir well.

Batter

We use an electric griddle to cook them. I can fit 8 at a time. Like with most things, patience is the hardest thing. I find it takes 5-6 minutes per side. When done cooking, transfer to a drying rack.

Healthy Pancakes

Serves 4 people (24 pancakes)

INGREDIENTS

  • 2 cup gf flour (namaste)
  • 2 tbsp baking powder
  • 2 tbsp milled flaxseed
  • 1 tbsp brown sugar
  • 2 cup milk
  • 2 medium egg
  • 2/3 cup applesauce (unsweetened)
  • 1 ripe medium banana

PREPARATION

  1. In a mixing bowl mix together the dry ingredients.
  2. Add the egg and milk, mix well.
  3. In a separate bowl, mash the banana and the applesauce.
  4. Add fruit mixture to the batter, mix well.
  5. Heat griddle pan (or fry pan)
  6. Pour 1/4 cup of batter onto pan for each pancake
  7. Cook until bubbly, then flip (about 5 minutes per side)
  8. Enjoy!

TIPS

  • To freeze: once cooled, place pancakes separated by parchment paper (5 fit great in a sandwich sized ziplock bag)
  • Serve with maple syrup
