Quinoa Egg Bites
This is a versatile dish that is great for brunch but can serve for a light dinner as well. I used cookie cutters to make them into fun shapes. I would think kids would like them but, of course, mine don’t.
First, cook up some quinoa per package instructions (2/3 cup dry which will result in about 2 cups cooked). Dice 2 tbsp onion. Cook 1 cup broccoli – I usually just steam it in the microwave in a bowl with some water. Once cooked, chop very fine. I sometimes use the food processor.
In a large bowl, lightly beat 2 eggs. Mix all the rest of the ingredients in (quinoa, broccoli, 1 cup cheddar cheese, onion, 1 tsp garlic powder, 1/2 tsp salt).
Line a baking sheet with parchment paper. Scoop the mixture in small circles on the baking sheet. I have used 1/4 cup to make even or in this occasion, used cookie cutters and filled.
Preheat over to 375 degrees and bake for 20-25 minutes until golden brown.
Quinoa Egg Bites
Serves 4 people
INGREDIENTS
- 2/3 cup dry quinoa
- 1 cup broccoli
- 2 eggs
- 2 tbsp diced onion
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1/2 tsp salt
PREPARATION
- Cook quinoa per package directions.
- Coop 1 cup broccoli. Put in glass bowl covered in water and cook in microwave for 3 minutes. Chop up fine
- Dice 2 tbsp onion
- Lightly beat two eggs in a large bowl.
- Add cooked quinoa, broccoli, onion, cheddar cheese, garlic powder, and salt to bowl. Mix well.
- Line a baking sheet with parchment paper. Add scoops of mixture to sheet (1/4 cup or using a cookie cutter).
- Preheat over to 375 degrees and bake for 20-25 minutes until golden brown.

TIPS
- This is a great brunch or brinner (breakfast for dinner) dish.
- I have used different sauces with this. Mixing some fresh cilantro with avocado and Greek yogurt works well.
